Toasted Coconut & Date Balls

Tasty, simple and easy to make energy balls that are great as nutrition-rich, guilt-free snacks and desserts.

Ingredients
  • 70 grams Shredded coconut
  • 200 grams Dates
  • 1 cup Milk (warm)
  • 1 tbsp Ghee
  • 1/4 tsp Cardamom powder (optional)
Instructions
  1. Deseed (if required) and finely chop the dates.

  2. Soak in warm milk for 10-15 minutes.
  3. Heat ghee in a pan on low heat.

  4. Add the coconut. Toast till golden brown, slightly crisp and fragrant. Once done, transfer to a separate bowl.

  5. In the same cooking vessel, pour the dates soaked in milk (along with milk) and cook on low heat.

  6. Stir frequently and cook the mixture till you get a fudge-like consistency.

  7. Remove from heat and fold in the toasted coconut and cardamom powder (optional).

  8. Divide mixture into 15 equal portions and roll them into balls.
  9. Store in a box in a cool place.
