Red spinach stir-fried in garlic-tempered oil.

  • 200 grams Red spinach leaves
  • 2 tablespoons Mustard oil
  • 3-4 cloves Garlic
  • 2 Green chillies slit
  • ½ teaspoon Salt
  • ¼ teaspoon Turmeric
  • ½ tablespoon Jaggery/Sugar
  1. Clean the red spinach leaves to remove any dust or sediments. Chop and set aside to drain.
  2. In a wok or kadhai, heat mustard oil (buy here).

  3. Add lightly crushed garlic cloves to the hot oil and stir till golden brown.
  4. Add the chopped red spinach leaves and mix well.
  5. Add the green chillies, cover and cook for 3-4 minutes.
  6. Add jaggery (buy here) or sugar (buy here), mix well. Cover and cook for another 4 minutes or until the water has almost dried.

  7. Switch off and remove from flame.
  8. Serve with steamed rice and a dash of kashundi (buy here).
